CSA Box: Thai chicken, pineapple and vegetable curry
The second dish was a Thai curry.
Thai curry with chicken, pineapple, and vegetables
*4 carrots, diced
*4 sweet potatoes, peeled and diced in 1 inch cubes
*4 potatoes peeled and diced in 1 inch cubes
*1/2 pineapple, peeled and diced into 1 inch cubes
2 onions diced (1 medium yellow and *1/2 our giant purple one)
2 lbs. chicken breast diced in 1 inch cubes
2 tbsp. Thai curry paste (I used masaman) (or to taste)
2 14.5 oz. cans coconut milk
2 cups broth
2 tbsp. fish sauce and/or soy sauce or to taste
4 tbsp. lime juice (or lemon juice)
Peanuts
Rice to serve
1) Bring a large pot of water to boil. Add potatoes, sweet potatoes and carrots. Boil until nearly-done, but still firm.
2) In a large saucepan on medium-high, stir-fry curry paste with a cup of coconut milk, mix well. Add onions, remaining coconut milk, pineapple, broth, and chicken.
3) When chicken is done, combine with drained potatoes, sweet potatoes, and carrots.
4) Add fish sauce or soy sauce and lime juice. Taste and adjust seasonings.
5) Serve over rice, topped with peanuts

The rest of the box? The kids and I have been having fresh fruit with breakfast every morning, and we still have lots of lettuce, some of the enormous onion, and a head of broccoli left for salads this week.

This looks good. How did it turn out? How long does it take from start to finish?

Hi Ellie,
It didn't take that long. The main time consumers were chopping the veggies and pineapple (10-15 minutes) and boiling the root vegetables (about 10 minutes). Once you start stir-frying and then simmering, it goes really quickly (another ten minutes). So, I'd say, about half hour total if you chop quickly.
